Normally on Summer Solstice we’d be making seafood paella on the grill, but being “sea-based” this year, we decided to do something a bit simpler, and just as tasty in its own way. It all starts with saffron, which has a way of elevating any dish - its generous, unique flavor and the deep red color it lends to meals feels like a real luxury. Saffron also has beneficial effects on mental health and taken at higher doses rivals anti-depressants. Mint, cumin, and smoked paprika bring me right back to Tangiers, and preserved lemon adds that kick of sour and salt to perfectly balance the flavor profile . The therapeutic properties of preserved lemons are due to 2 main factors: The beneficial bacteria creating during the fermentation process The healing compounds found in lemon peels.</image:title>

The elevated salt and acidity of lemons does slow down the proliferation of lactic acid bacteria, so the amount found in preserved lemons is not as high as in, say, sauerkraut. But a little goes a long way; small amounts of Lactobacillus strains have been shown to enhance digestion, improve mental health and reduce cytokine levels associated Long-COVID, chronic Lyme and other conditions associated with immune function imbalances.       <image:caption>INGREDIENTS: 12 Lemons (medium sized, meyer lemon or other thin-rind lemon) 1/2 cup Sea Salt (or Himalayan - do not use salt with anti-caking agents) DIRECTIONS: Wash the rind of 9 medium lemons and set aside. Do all the cutting and salting work over a bowl to catch the fallen salt and juice Stand a lemon on its end and slice in half until you almost cut through, leaving about 1/4 inch of lemon. Then cut another slice so that the lemon is now quartered, but each quarter is attached at the bottom Open up the first slice and tip 1 tsp in, then open the second and add another teaspoon. Squeeze the lemon closed again and place in the jar. If your lemons are small enough, you can squeeze 3 lemons into the bottom layer of the jar, ending up with 3 layers of 3 lemons each. The lemons should just barely fit, this will encourage juices to come up and cover the lemons. Continue slicing each lemon, filling each with 2 tsp salt and packing them into the jar. Pour the excess juice and salt from the bowl over the lemons. Cut the 3 remaining lemons in half, and squeeze the juice into the jar until the lemons are covered in juice, then take one of the juiced half rinds and put on top before screwing the lid on - this will help keep the salted lemons below the surface of the juice. Put the jar in a sunny window sill for a couple weeks, opening the lid to let air out everyday. You should notice a few bubbles rising from the bottom when you do this. Add more lemon juice if needed to keep the lemons submerged.</image:caption>

The same bacteria that preserves food has the added benefit of introducing a range of beneficial bacteria to the gut, which can crowd out “bad” bacteria and prevent imbalances in the gut microbiome. This is really important if you have gut issues. . Benefits of this lactic-acid producing bacteria include balancing the gut microbiome, boosting immune health and improving skin health and digestive conditions like IBS and eczema to name a few. Beyond its health benefits, lime pickle is well worth making for the flavor factor alone - which brightens simple rice and dal dishes, or puts your favorite lavish Indian meal over the top. and a little goes a long way here, so one jar lasts a long time.</image:title>

      <image:caption>INGREDIENTS 9 Limes (medium) 1/3 cup Sea Salt 2 tbsps Black Salt 1 tsp Coriander Seed (whole) 2 tbsps Cumin Seed (whole) 1 tsp Fennel Seed (whole) 1 tsp Fenugreek (whole) 2 tsps Mustard Seed (whole, divided) 2 tsps Cayenne Pepper 2 tsps Turmeric 1/4 tsp Asoefetida (increase to 1/2 teaspoon if not using black salt) 1/2 cup Avocado Oil (you can sub in olive oil - just be careful not to overheat) DIRECTIONS Prepare and sanitize your supplies as per my fermentation basics here limes and chop into quarters, then slice each quarter crosswise into 4 slices, slicing so that you have 4 shorter wedges and toss in a bowl with the salt and mix well. Place the mixture into a quart or litre sized jar and place in a sunny window for about 2 weeks. If cool, leave for another week. Open the lid every now and then to let out air, and shake the mixture now and again to distribute juices. After the limes have fermented for 2-3 weeks, make the spice and oil mixture. In a dry pan, dry roast the coriander, cumin, fennel, fenugreek and 1 tsp of the mustard seeds until aromatic. Take of heat, grind the seeds and set aside. Place the oil in the same pan and heat gently on medium. When warm, add the nigella seeds and remaining mustard seeds and heat until aromatic. Take off the heat and combine the oil mixture, ground seeds and remaining spices in a large bowl and combine, then add the limes and their salty juice to the bowl and mix well. Allow the pickle to sit in the warm window sill for another 48 hours before storing it in the fridge. It will continue to soften and improve over time. Enjoy!</image:caption>

      <image:caption>INGREDIENTS 250 grams Dry Lentils 3 Tbsps Extra Virgin Olive Oil 2 Yellow Onions (medium) 6 Garlic (cloves) 1 bunch Swiss Chard (silverbeet) 2 Tbsps Cumin Seed 1 Carrot (medium, grated) 1 Lemon 400 grams Canned Whole Tomatoes (1 can diced) 5 cups Vegetable Broth Some red wine (optional) Sea Salt &amp; Black Pepper DIRECTIONS Soak lentils overnight in cool water, when you are ready to make the stew, strain, rinse and set aside PREP: Dry roast the cumin seeds until aromatic and just turning golden, then take off heat. Cut or peel off 2 wide strips of lemon rind with the pith, then chop into matchsticks Separate the chard leaves from the stems. Chop the stems into 1/2 inch pieces and chop the leaves into ribbons, then set aside. Add the oil to a large heavy bottom pot on medium heat. Add the chopped onions and garlic and some salt and pepper and saute for a few minutes, then add the chopped chard stems and gently saute until soft. Add the tomatoes, grated carrot, cumin seeds, the lemon rind and a glug of red wine, stir and heat gently for 5 minutes. Add the stock and lentils, bring to a boil then simmer until lentils are almost done, about 20 minutes Fold in the chard/silverbeet leaves. At this point you may want to hot add water if the stew is too thick. Simmer another 10 minutes and salt to taste. Serve with lemon wedges. TIP Make a double batch of this soup and freeze in portions.</image:caption>

      <image:title>Recipes - Zephyr’s Breakfast - Alright, yes, I definitely mentioned protein, but it’s worth mentioning twice! Not eating enough protein is really common. The average, healthy adult should be getting about .31-.36 grams of protein for each pound body weight. The daily protein goal for a person weighing 140 lb or 64 kg is 44-50 grams. Those building muscle should eat more and the same is true during illness or in times of stress. Stress actually triggers the body to breakdown protein from muscle tissue. And amino acids in protein are required for a proper immune response. Another cool fact is that eating most of our daily protein in one larger meal helps build muscle faster AND if eaten in the morning, helps regulate our circadian rhythm (the sleep-wake cycle) by spiking cortisol (our wakefulness hormone) when it should be high - rather than later in the day when cortisol is leveling off. Aaand, eating a large breakfast that includes protein, fat, and complex carbs-like Zephyr’s Breakfast-also helps us feel fuller longer, which has been shown to lead to weight loss.</image:title>

      <image:caption>INGREDIENTS 1 cup Organic Polenta 4 1/2 cups Water 2 tbsps Extra Virgin Olive Oil (plus more for oiling the pan) 1 can Black Beans (organic) 1 tsp Coconut Oil 4 Egg 1/4 cup Parmesan (optional) 1 cup Salsa or make your own! 1 cup Cilantro (coriander leaf) METHOD Make the polenta - If you are making your own polenta, make it at least 2 hours before needed, to let it firm up. I like to make it the day before and pop it in the fridge. This recipe makes enough to fill a cast iron frying pan or 9x9 inch (22x22 cm) pan. You will have leftover polenta. Alternatively, you can buy premade polenta in logs at some grocery stores. Have on hand a whisk and wooden spoon, salt, pepper and olive oil, and an oiled pan to pour the polenta in when dit is time. Bring the water to a boil in a heavy bottom pot and whisk in the polenta. Whisk consistently so the polenta does not clump up. You will notice the mixture thickens very quickly. Turn down and simmer low, using the wooden spoon, preferably with a flat edge so that while you are constantly, slowly, stirring, you make contact with the entire surface of the bottom of the pan, ensuring the mixture does not burn. This takes 10-20 minutes, depending on polenta type. Instant or quick polenta cooks faster. When the polenta starts to come away from the side of the cooking pot and it is nice and thick, take off the heat and stir in the salt, pepper and oil. Pour the polenta mixture into the prepared pan, smoothing the mixture so it evenly sits in the pan. Allow to cool, then cover and chill overnight or a few hours in the fridge. When you are ready to eat, heat the beans in 1 tablespoon of the salsa, mixing a mashing the beans a bit. Simmer on low while you prepare the polenta and eggs slice the polenta into 8-10 pieces. On medium heat, add coconut oil to a cast iron skillet fry two peices per person. Flip and fry each side until golden Meanwhile, prepare the eggs as you like them, chop the cilantro and grate the cheese (if using) To serve, divide the black beans between plates, then the polenta squares, eggs and cheese. Top with cilantro and salsa, enjoy! *Tip</image:caption>

      <image:caption>Makes 12 bars 375 grams Tahini 1/2 cup Coconut Oil 1/4 cup Maple Syrup 1 cup Protein Powder (oat flour will work in a pinch) 1/2 cup ground Hemp Seeds or Hemp Flour 125 grams Dark Chocolate - at least 70% cacao 3/4 tsp Cinnamon 1/8 tsp Sea Salt Line a small baking pan (Approximately 9" or 25cm square) with baking paper with about 1 inch overhang (for removal) and set aside. Add the coconut oil, maple syrup (or honey) and 275g of the tahini to a large saucepan. Heat over a low heat until mixture is liquefied and smooth, whisking throughout, then take off heat and mix in the ground hemp seeds, salt, cinnamon and protein powder until completely uniform and smooth. Roughly chop the dark chocolate and fold half into the above mixture. Pour the mixture into the lined baking pan and spread it evenly with a spoon or spatula and pop in the freezer. Add the remaining tahini and dark chocolate to the saucepan you used to heat the tahini mixture. Set on very low heat and gently stir and melt (never walking away, or stirring too much) until the chocolate has just melted. Pour the mixture over base and spread evenly. Place the bars in the freezer for 1-2 hours. When set, using the paper, lift the bar out of the pan and cut into 12 portions using a very sharp, warm knife (hot water poured over the knife then dried). *These keep well an airtight container in the freezer for up to 3 months. Allow to thaw for 5-10 minutes before serving. Enjoy!</image:caption>

      <image:caption>4 Nori Sheets (raw or roasted, crushed) 1/2 Cup Pumpkin Seeds (raw) 1/2 Cup Sunflower Seeds (raw) 1/4 Cup Hulled Sesame Seeds 1/4 Cup Hemp Seeds or flax seeds 1/2 Cup Chia Seeds 1 Garlic (clove, shredded fine) 1/4 teaspoon Salt 1 Cup Water Preheat the oven to 300ºF (150°C). Line a large baking sheet with parchment paper, or grease well with coconut oil. In a large bowl, combine the chia seeds, sunflower seeds, pumpkin seeds, sesame seeds and crushed nori. Add the garlic and salt to the water, and pour over seed mixture.. Stir with a spatula until combined. Allow the mixture to sit for a couple of minutes until the chia seeds absorb the water. After the 2-5 minute rest, when you stir the mixture, you shouldn’t see a pool of water on the bottom of the bowl. With the spatula (and a hand, if necessary), spread the mixture onto the prepared baking sheet in two small rectangles, about 12x7 inches each about 1/8 to 1/4 inch thick, just thick enough to cover the pan. *Tip: To avoid sticking to hands or spatula, have a bowl of water nearby and dip hands/spatula in water before smoothing surface. Bake for 35 minutes, or until they have stiffened enough to flip. Remove from the oven and carefully flip each rectangle with a spatula. Bake for 25 to 35 minutes more, until lightly golden around the edges. Watch closely near the end to make sure they don’t burn. Carefully cut crackers while still hot and let cook completely before storing. *Store in an airtight container or jar on the counter for up to 2 weeks. You can also freeze the crackers in freezer bags for up to 1 month.</image:caption>

Feijoas are a great source of dietary fibre, vitamin C, and contain potassium, B vitamins, antioxidants and folate - which can support cognitive function, cardiac health and of course, digestion! Feijoas are a good fruit source for diabetics (and the rest of us) because they are less likely to spike blood sugar levels than some other fruits.</image:title>

      <image:caption>3/4 cup Buckwheat Flour 1/2 tsp Sea Salt 1 tbsp Raw Honey (or maple syrup) 2 tbsps Butter (melted, plus more for cooking crepes and topping) 2 Eggs (room temperature) 1 1/4 cups Unsweetened Almond Milk (room temperature) 6-8 ripe feijoas (or 4 kiwis or 1 pear) DIRECTIONS: Melt the butter in the skillet you'll use for the crepes. In a bowl, whisk the flour and salt, add the eggs and honey and whisk until lump free, then whisk in the melted butter, then 1 cup of milk. The batter should be thin, like the consistency of heavy cream. Add more milk if needed. The batter keeps well overnight in the fridge, and improves if let to sit up to an hour at room temp before using. Warm the skillet to medium-medium high heat. Melt a small dollop of butter before each crêpe, just enough to thinly spread over the surface of the pan. Add 1/4 cup or less to the pan, swirling so that the batter thinly covers the surface. You will know at this point if the batter is too thick; the batter should just barely cover the surface. Let the crêpe cook for about a minute or less - just until golden brown, then flip it and cook for about half that time. If the crêpes are cooking faster than that or getting too dark, turn the heat down. If the heat is too high you will end up with crispy crêpes, you want them to be tender and just golden on each side. You can either serve them as you cook, or stack in a warm oven to serve all at once. Drizzle with honey or maple syrup and serve with feijoas or other fresh fruit, yogurt, sliced almonds or whatever you like.</image:caption>

Meanwhile, add caraway seeds to a dry saucepan and warm on medium heat until aromatic, then add broth, garlic and spices and simmer gently for 10 minutes. Add 1/2 the roasted cauliflower, hemp hearts and nutritional yeast to the broth and blend in a blender in batches until smooth. Add the remaining florets to the blended soup, taste for salt and serve.</image:caption>

I encourage you to tweak the recipe to suit the herbs that are available where you live. The recipe here was developed when my garden in Napier was running rampant and I had to cut back my rosemary, thyme, sage and oregano.
